The VGIC367 is a retired 36-inch sealed burner range, and in a kitchen with a wide cooking wall it is often the centerpiece. Its porcelainized top is a single piece with an upturned edge, so a pot that boils over stays on the cooktop instead of seeping into the cabinets.
At this width the oven is large, and its parts carry more load than a 30-inch oven does. We see aging bake igniters that take longer to open the gas valve, and sensors that read a few degrees off. On top, spilled sauce under a burner cap is behind most of the ignition complaints.

That is the most likely cause. A weak igniter delays the gas valve, so heat starts late. We test the igniter's current draw against what it should pull, and replace it if it is below the safe range.
