On older Viking ERC ovens such as the VGDO271 and VEDO273, F3 means the oven sensor is open, so the control cannot read the oven temperature. On the VGSO166 gas oven the same F3 means a controller, the thermostat-timer, is malfunctioning. The meaning depends on the platform. The oven will not hold temperature while the message is on the display.
1. Switch the oven off and let it cool. 2. Turn the breaker off for a minute and restore it, then try a short bake. 3. If F3 returns, stop using the oven. The sensor and wiring are behind the oven wall. If you have a gas oven and notice any gas smell, leave the house and call the gas utility from outside.
The sensor circuit is broken, so the control cannot read a temperature. It stops heating instead of guessing, which is why the oven goes cold and shows F3.
That gas oven has a thermostat-timer instead of the ERC. There, F3 points to the controller itself, not to the oven sensor, so the repair is different.
We do not recommend it. The sensor is inside the oven wall, the oven needs to be powered down safely, and on gas models a mistake can create bigger problems.
A technician diagnoses it on site and gives you the price in writing before any work starts.
