Viking VWH48781 48-Inch 27-Inch-Deep Hood
The VWH48781 is the 48-inch, 27-inch-deep version of the retired Viking wall hood family. The deeper canopy projects out over a wide range, which helps with the front burners and any griddle but also gives grease a larger shelf to settle on.
For service, we clean the filters and the underside of the canopy first, since that is where most of the load collects. The blower wheel and motor are inspected next, and we run each speed while listening for noise. We test the lights and the switch, and then check that the damper opens fully. A big hood also needs a firm wall mount, so we look at the fasteners and tighten any that have worked loose.

The deeper canopy gives warm grease more surface to cool on. Wiping the canopy during each filter wash keeps it from dripping back. Wiping it at every filter wash keeps the buildup thin and easy to remove.
The airflow is set by the blower and duct. A clean wheel, free damper and clean filters let the blower deliver what it was built to deliver.
