Viking VGGT240 24-Inch Griddle Rangetop
The VGGT240 is a retired 24-inch gas rangetop whose surface is a griddle/simmer plate: commercial-grade machined steel with a blanchard finish that holds cooking oils and helps keep food from sticking. It was designed as a compact specialty station in a counter cutout.
With a steel plate, the heat story is about how evenly the burner under it burns. Grease that runs toward the burner coats the ports and makes the flame narrow, so one side of the plate runs cooler. The igniter follows, since oil vapor and drips shorten its life.
